Joan Hansen's Sweet Potato Casserole




 Family Recipe

Serves: 10

Ingredients

  • 3 cups canned sweet potatoes, drained and mashed
  • 1 cup sugar
  • 2 eggs, lightly whipped
  • 1/2 cup half & half
  • 1/3 cup soft butter
  • 1 tsp vanilla
  • 1/2 tsp salt
Topping: 
  • 1 cup soft brown sugar
  • 1 cup crushed pecans
  • 1/2 cup flour
  • 1/3 cup melted butter

Directions
  1. Preheat oven to 350*F. Coat sides and bottom of a 9x13 pan with butter. Mix all ingredients together and spread into the pan. 
  2. Mix all of the topping ingredients together and spread over the sweet potato mixture. 
  3. Bake at 350*F for 35-45 minutes. 
This recipe is very sweet and can even pass as a dessert.
