Tom Ka Gai (Lisa's Hearty Tom Ka Gai)

 Ingredients:

4 cloves garlic, peeled and minced

2 large onions, finely chopped

3 Tbsp Olive Oil

Ginger root, minced (about the size of your middle three fingers)

4 tsp red chili paste

1 1/2 tsp ginger powder

1/4 cup sugar

2 tsp turmeric

6 cups water

2 tsp chicken soup base

2 tp lime juice

3 tsp lemon juice

7 Tbsp fish sauce

3 chicken breasts, thinly sliced

3 green onions, sliced into 1/2 inch pieces

1 pound mushrooms, sliced

4 cans coconut milk

1/2 cup cilantro

Instructions:

1. In a large pot sauté garlic and onions in olive oil. 

2. Discard extra strings from minced ginger and add ginger to pan. 

3. Add chili paste, ginger powder, sugar and turmeric to pan and mix well.

4. Add to the pot water, soup base, lime juice, lemon juice and fish sauce.

5. Next, add chicken, green onions and mushrooms.

6. Bring to a boil and cook until the chicken is done - roughly 3 - 5 minutes.

7. Add coconut milk, cilantro, mix well and serve.
