Grapefruit Appetizer

 



Lisa Peterson's Family Recipe

Ingredients
  • 2 cups sugar
  • 2 cups water
  • 2 15 ounce cans grapefruit sections
  • Frozen raspberries
  • 7-Up or Sprite (any lemon-lime soda will work)
Directions:

  1. Boil and water until the sugar dissolves, stirring occasionally. 
  2. Beat the grapefruit sections with an egg beater or immersion blender until smooth.
  3. Combine liquids and pour into a shallow pyrex baking dish. 
  4. Freeze, keeping it level until frozen.
  5. One hour before serving, chop the grapefruit into chunks and place into serving cups.
  6. Top with frozen raspberries and 7-up just before serving.
