Hungry Jack Casserole (An inexpensive childhood favorite)

 1 pound bacon, cooked crisp and drained, in bite sized pieces

1 medium onion, diced

1 1/2 - 2 cups shredded sharp cheddar cheese

1 tsp dried mustard OR 1 1/2 tsp wet yellow mustard

1 large tube of layered biscuit dough

1 large can 15 ounces baked beans


Instruction:

1. Fry the bacon and diced onions, then drain. 

2. Heat the beans and mustard to a low boil.

3. Add bacon and onions.

4. Pour into a 9 x 13 inch baking dish.

5. Cut each biscuit in half. Stand biscuits, cut side down, on top of the beans and bake uncovered according to the directions on the biscuit packaging. If the tops start getting too brown, cover loosely with foil.

6. When done, sprinkle biscuits with cheese and return pan to the oven until cheese is melted.
